    Used this recipe with some tweaks: https://www.thismomsmenu.com/low-carb-jambalaya/#recipe. The tweaks I made are listed below – I’m not sure of the exact macros with my adjustments.

    * 3/4 lb Medium Shrimp peeled and deveined
    * 1 lb Boneless Skinless Chicken Thighs cut into bite sized pieces
    * ~4 tablespoons Tony Chachere’s “More Spice” Creole seasoning (I just followed my heart sprinkling it on the chicken, shrimp, and into the Trinity as it cooked)
    * 1/2 teaspoon paprika
    * 1/2 teaspoon Pepper
    * 3 tablespoon Olive Oil
    * 1 White Onion Diced
    * 1 Green Bell Pepper Diced
    * 2 Stalk of Celery Diced
    * 2 cloves Garlic Minced
    * 1 can tomatoes & okra (Margaret Holmes brand)
    * 2 teaspoon Worcestershire Sauce
    * 13 oz Andouille Sausage Sliced
    * 6 cups Cauliflower Rice
    * Hot Sauce to taste

    **INSTRUCTIONS**

    Combine the chicken and shrimp with a generous amount of Tony’s Creole seasoning, 1/2 tsp paprika, & 1/4 tsp pepper. Set aside.

    Heat the oil in a large skillet over medium heat. Add the onions, green pepper, celery, generous sprinkling of Tony’s, & rest of the pepper. Cook, stirring frequently for about 10 minutes, or until the vegetables have softened.

    Add the minced garlic, tomatoes & okra, and Worcestershire sauce. Bring to a simmer, then stir in the shrimp, chicken and the sausage. Stir, continuing to cook until the meat has cooked through, about 5 minutes.

    Stir in the cauliflower rice and hot sauce. Cook for an additional 5 minutes, or until the cauliflower is done to your liking.

    Serve with extra hot sauce if desired

    I believe it’s for coffee though, not soup.
