Changes I made:
– Swapped out the cornstarch for xanthan gum
– Used Lakanto sweetener instead of sugar
– Used mushrooms I could find at the supermarket because they didn’t have all the ones listed
– No tomato, I just used one whole red bell pepper instead.
-No carrot
This is insanely filling and full of protien. Easy to add fat with sesame oil or an extra egg! Very tasty:)
Recipe:
– Mushrooms (about 2 cups various chopped ones)
– Chicken broth
– Black Vinegar
– Soy Sauce
– 2 eggs, whisked
– 1 tsp xanthan gum, whisked with water to form a slurry
– 1 red bell pepper, diced
– I package of firm tofu, diced
– Salt to taste
– White Pepper to taste
– Lakanto sweetener to taste
– Sesame oil and green onion for garnish
– 1 dried or two fresh hot peppers
Prep and chop everything first!
Start by frying the hot pepper in oil till fragrant, then discard the peppers. Add in the red bell pepper and saute for a minute, then add chicken broth and white pepper. Boil for a few minutes before whisking in the egg mixture while mixing to create ribbons, and then do the same for the xanthan gum slurry so it thickens. After this, add everything but the garnishes and boil until everything is cooked through! Garnish and enjoy:)
Edit: You can swap out chicken broth for veggie broth and easily make this vegetarian!
That looks amazing. I was at Costco the other day and they had a melody of mushrooms that would be perfect in this…
