INGREDIENTS
For the dressing:
1 clove Garlic, minced
1 tbsp Dijon Mustard
1/4 cup Apple Cider Vinegar
1 tbsp Lemon juice, raw
1/2 cup Extra Virgin Olive Oil
Salt & Pepper
For the Salad:
1 lb Lacinato Kale
3 slices of bacon, diced
1/4 cup, Parmesan Cheese

INSTRUCTIONS
Combine minced garlic, dijon mustard, apple cider vinegar, and lemon juice in a bowl. Slowly whisk in the olive oil until dressing is well combined. Remove ribs from the kale and slice crosswise. Set aside. Fry bacon for 5 minutes or until desired crispness. Let cool. Combine kale, parmesan cheese, and cooled bacon in a salad bowl. Pour dressing over salad and toss well.
