    **Ingredients :**

    * 330ml heavy cream
    * 150ml whole milk
    * 1 vanilla bean (if you don’t have vanilla bean, substitute it by 1 tsp vanilla extract)
    * 4 egg yolks
    * 65g sugar

    **Instructions:**

    1. Cut vanilla bean to half and scape inside the bean. Set aside
    2. In a small saucepan, pour in 330ml heavy cream, 150ml full fat milk, vanilla and scrapings and cook under medium heat. Bring the cream mixture to simmer, remove from heat and let it sit for 10 minutes
    3. In another bowl, whisk 4 egg yolks and 65g sugar until light
    4. Slowly pour hot cream to egg yolks through a strainer, whisk until fully combined
    5. Strain the custard mixture one more time
    6. Prepare 4 ramekins and divide the custard mixture among them
    7. Bake for 35-40 minutes in the oven at 325F
    8. After baking in the oven, take the ramekins out to chill in the fridge for at least 3 hours
    9. Sprinkle 1 – 1,5 tsp sugar on top of each crème brulee ramekin, use a torch to caramelize until it’s golden brown and bubbling.
