    CRUST

    8 Oz Shredded Low-Moisture Mozzarella

    2 Eggs

    2 Oz Cream Cheese

    1/2 Tsp Baking Powder

    1/4 Tsp Salt

    Chipotle Chicken Topping and Sauce

    4 Oz Ground Chicken

    1 Can Chipotles, Peppers, and Sauce Separated

    3 Tbsp Sour Cream

    1 Tsp Lime Juice

    1) Brown your chicken in a pan with the separated adobo sauce and season with 1/4 tsp salt. Drain and set aside

    2) Roughly chop your chipotle peppers and place 1 tbsp in a bowl along with your sour cream, lime juice, and a pinch of salt. Mix well and set aside.

    3) In a blender, add all of your mozzarella, eggs, cream cheese, baking powder, and salt. Blend on low for about 2 minutes or until it resembles the texture of cottage cheese.

    4) Pour this into a non-stick pan over low heat and let cook on one side for about 5 minutes. Once browned on the bottom, top with your chipotle chicken and an option 2 tbsp of shredded cheddar cheese.

    5) Place into a broiler that’s set to high to allow top of the crust to cook. Let broil for ~2 minutes. Remove and slice.
