    Nutrition per serving:

    Calories: 578

    Recipe (makes 12 servings)

    Crust:
    2 cups almond flour,
    8 tbsp (4 oz) melted butter,
    1/4 cup swerve confectioner,
    1/4 tsp salt

    Filling:
    32 oz (4 cups) softened cream cheese,
    1 cup heavy whipping cream,
    1/2 cup swerve confectioner,
    2 tsp vanilla extract,
    1 lemon juiced

    Vanilla shortcake crumble:
    1 packet sugar free JELL-O Vanilla Pudding,
    1/4 cup almond flour,
    4 tbsp melted butter

    Strawberry shortcake crumble:
    1 packet sugar free JELL-O Strawberry flavored gelatin,
    1/4 cup almond flour,
    4 tbsp melted butter

    Instructions:
    1. For the crust, mix 2 cups almond flour, 4 oz melted butter, 1/4 cup swerve confectioner, and 1/4 tsp salt.
    2. Place crust in baking tray and then bake in the oven at 350F for 10 minutes. (The size of my baking tray was (8”x 8”)
    3. For the filling, mix 2 lbs (4 cups) softened cream cheese, 1 cup heavy whipping cream, 1/2 cup swerve confectioner, 2 tsp vanilla extract, and lemon juice. Use hand mixer until smooth and well combined.
    4. Pour you filling on top of your crust and smooth out the top with a spatula or your hands.
    5. Place your cheesecake in the freezer for 1 hour.
    6. For your vanilla crumble topping, mix 1 packet JELL-O Vanilla Pudding, 1/4 cup almond flour, and 4 tbsp melted butter. Repeat with the strawberry crumble ingredients in a separate bowl.
    7. Spread both crumble dough on parchment paper over a baking sheet.
    8. Bake your crumble at 350F for 7 minutes.
    9. Let the crumble cool at room temperature for 30 minutes and then cool in the refrigerator for 30 minutes.
    10. Break and combine your crumbles together.
    11. Top your cheesecake with your strawberry vanilla crumble.
    12. You can place sugar free whipped cream and a strawberry on top for more visual appeal and taste.
    13. Enjoy!!
