  1. I’ll bet this would be wonderful with either Palmini pasta or even riced cauliflower. I can’t go for the low carb orzo – way to many carbs for me.

  2. Ingredients:

    -One package Thin Slim Foods Impastable low carb rice orzo. I’ve tried lots of low carb pastas over the years, and this one is really good…not their fettuccine version mind you… but the orzo version is amazing.

    -Sliced mushrooms, about a pound. I used blue oyster mushrooms that we grew ourselves with a mushroom grow kit we got at a farmer’s market – highly recommend if you haven’t tried it! Shiitakes would also be good!

    -Butter, about 3-4 tablespoons total

    -Olive oil, a couple turns of the pan for the mushrooms and the risotto mixture

    -3-4 cloves of garlic, minced

    -Pinch of dried thyme

    -2 handfuls of grated Parmesan cheese

    -Splash of heavy cream

    -Drizzle of truffle oil (optional, but so good)

    Instructions:

    -Sauté the sliced mushrooms in a mixture of olive oil with about half the butter (add salt and pepper once they are mostly cooked down and browned)

    -Boil water in a pot and cook low carb orzo for 7 minutes; drain

    -In the same pot you cooked the orzo, melt the remaining butter and add a couple turns of olive oil on medium low

    -Add the 3-4 cloves of minced garlic and sauté for a few minutes

    -Add pinch of dried thyme

    -Then add orzo to the pot with the garlic, season with salt and pepper and stir

    -Add a splash or two of heavy cream and a couple handfuls of grated Parmesan

    -Stir/fold to combine, season to taste

    -Stir in sautéed mushrooms, top with extra Parmesan cheese or parsley if desired

    -Drizzle truffle oil over the top and serve!

    Sorry for not having exact measurements – when I cook I tend to just toss things together. I wish I had better pictures; this one doesn’t do it justice! It is soooo good and the perfect fall comfort food meal!

    It’s a great and filling meal on its own, especially for those nights when you want to take a break from meat dishes, or just want a good meal you can throw together in less than 30 minutes. That said, this would also make an impressive dinner for guests combined with simple pan seared chicken thighs (avocado oil, salt, pepper, fresh thyme).

  3. I have done some similar dishes using konjac rice, with zero carbs. The texture is perfect for risotto.
