Download This cauliflower mash recipe is a deliciously satisfying side, low in carbs and big in flavor.
Ingredients:
Fresh cauliflower head, 1 – 1.5kg before cleaning
50g butter
50g mascarpone cheese
Salt and pepper to taste
Spring onion as a garnish
Method:
Use a fresh head for best results.
Remove the leaves from the cauliflower head. Cut the florets from the stem and place into a small holder. I use the inner of a salad spinner.
Rinse the florets.
Place the trivet inside the inner pot of your pressure cooker. I use a Instant Pot.
Place the holder with florets on the trivet. Add cup of water and seal pot.
Select pressure cook and set timer at ZERO minutes.
As soon as pressure is achieved, do a quick pressure release.
Place the steamed florets in a bowl and blend with a stick blender.
Add the butter and mascarpone cheese. Season to taste with salt and pepper.
Blend until smooth.
If using as a side dish, garnish with some chopped spring onions or chives.
Enjoy as a side dish or base for any stew.

Doesn’t seem that easy. I just rinse it by hand and throw it in a pot until it cooks.
