How to Make a Delicious Beef Stroganoff in 30 minutes | Quick and Easy Midweek Dinner.

Classic Beef Stroganoff with tender strips of beef and mushrooms in an indulgent creamy Stroganoff sauce, served over cauliflower mash . This is an easy, one-pan, 30-minute recipe!

This recipe relies on a quick sear (1 minute per side) so a high quality, tender steak is critical for best results. Best cuts to use is Sirloin, Ribeye or Filet.

Ingredients:

400g sirloin steak, thinly sliced into strips

2 Tbsp olive oil

2 Tbsp butter

1 small onion, finely chopped

200g white mushrooms, thickly sliced

1 garlic clove, minced

1 Tbsp golden flaxseed flower

200ml bone broth (beef)

175ml heavy (high fat) cream

50g sour cream

1 Tbsp Worcesters sauce

1/2tsp dijon mustard

Salt and black pepper to taste

To Serve:

1 Tbsp green onion or chives, to garnish

Cauliflower mash as base

Instructions:

Prepare the ingredients that require cutting or chopping. Thinly slice the meat into strips, put aside. Thickly slice the mushrooms and put aside. Finely chop the onion and mince the garlic clove.

Place a large deep pan over medium-high heat. Add the olive oil and once oil is very hot, add thinly sliced beef strips in a single layer, cooking 1 minute per side without stirring. Cook until just browned and no longer red. Sear beef in batches so you don’t overcrowd the pan. Remove beef to a plate and cover to keep warm.Add the butter, chopped onion and sliced mushrooms. Sauté until liquid has evaporated and onions and mushrooms are soft and lightly browned.
Add minced garlic and sauté 1 minute until fragrant. Add the golden flaxseed meal and sauté another minute stirring constantly.
Pour in the bone broth, scraping any bits from the bottom of the pan then add the heavy cream and simmer another 1 to 2 minutes or until slightly thickened. 

Add a few Tablespoons of the sauce to the sour cream and stir to temper it so the sour cream doesn’t curdle, then add it to the pan while stirring constantly.

Stir in the Worcester sauce, dijon mustard, and season with salt and freshly grounded black pepper and continue simmering until sauce is creamy. Add beef with any accumulated juices back to the pan and bring to a simmer or until beef is heated through.

Serve with cauliflower mash. Enjoy.
