How to make a Lemon Meringue Cupcake. Keto Friendly.

Download Sweet Meringue, sweet and sour lemon curd and delicate cream. You will fall in love with this dessert

Ingredients:

For Meringue:

5 egg whites.

2 tablespoons of erythritol.

1 tsp lemon juice.

1 tsp xanthan gum.

For filling:

Lemon Kurd:

5 yolks.

1 tablespoon sweetener ( I use erythritol and stevia mix).

100 ml lemon juice.

Zest of 3 lemons.

80 grams of butter.

Whipped cream:

150 ml heavy cream.

Instructions:

Beat egg whites at room temperature until white foam forms.

Add the sweetener and beat for a couple of minutes.

Add lemon juice and xanthan gum, mix everything.

Put in a pastry bag.

Pipe onto baking paper in the form of a nest.

Bake at 90 degrees C for 90 minutes using convection mode. Leave to cool completely in the oven.

Making Lemon Kurd:

Mix yolks, lemon juice and zest with sweetener and set on a low temperature. Simmer until thickened. Cool and filter the liquid. Add butter and mix everything again. Kurd is ready.

Whip the heavy cream separately until thick, I did not use a sweetener.

Putting everything together:

Put the lemon curd in the meringue and then cover with whipped cream on top. Decorate with grated chocolate or berries (optional)
