  1. Have you ever made your own Keto-friendly maple syrup? It’s a super simple blend of xanthan gum, butter extract, and maple extract. The maple syrup flavor is what gives this salad its rich flavor, but it can be omitted if you don’t mind it being more savory.

    2 tbsp olive oil
    1 each onion
    2 clove garlic
    1 each red bell pepper
    1 each carrot
    2 each green onions
    15 oz tofu
    2 tbsp soy sauce
    1 tbsp keto maple syrup (or sweetener of your choice)
    0.25 tsp ground coriander
    2 cup spinach
    0.5 lime lime



    Chop the onion, garlic, bell pepper, and carrot. Slice the green onions and cut the tofu into small cubes.
    Heat 1 tbsp olive oil in a skillet over medium heat. Once hot, add the tofu and cook until lightly crispy on all sides. Stir occasionally to avoid burning. When crispy, remove from the heat and set aside in a bowl.

    Add 1 tbsp olive oil to the same skillet. Add onion and garlic. Cook for 2 minutes, stirring occasionally until onions are soft. Add diced red bell pepper, carrots and tofu. Cook for 5-6 minutes, stirring regularly until carrots are cooked.

    Stir in the soy sauce, keto syrup or sweetener and ground coriander. Cook for another 3 minutes.

    Stir in the spinach, green onions, and lime juice. Serve warm or cold.
