  1. INGREDIENTS :

    1 cup sweet corn cooked

    1 can black or red kidney beans rinsed

    4 baby marrows* grilled and cut into chunks

    1 avocado sliced

    A chopped tomato

    1 red pepper chopped

    Chopped lettuce (optional)

    1 red onion chopped (optional).

    • ⁠(marrows are like zucchini but a bit larger, you can use zucchini or courgette)

    DRESSING THE CORIANDER SALAD

    handful fresh coriander

    1 clove garlic

    1/2 cup of Hellman’s mayonnaise (or 1/2 cup sunflower oil if you don’t want a creamy dressing)

    juice of 1 lemon

    1 tsp paprika

    1 green chili finely chopped (optional)

    salt and pepper

    MEXICAN SALAD METHOD

    In a salad bowl arrange the lettuce leaves, then add all the other ingredients

    In a blender place the coriander and garlic and blitz then add the remaining ingredients and blitz until smooth

    Season with salt and pepper

    INGREDIENTS :

  3. Made yesterday along with ribs and baked potatoes after seeing posted elsewhere on Reddit and it was excellent. Only change I made was adding a little honey to the dressing when blending. Husband said it was in his “top 3 ever” which in reality is a way bigger number than 3 but still a very high compliment.

    Edited to add that I reserved the tomato, avocado and lettuce on the side when preparing. I tossed everything else together (incl some of the dressing) and let set in the fridge for a few hours to come together without anything that could get soggy. When it was time to eat, I added the lettuce, tomato and avocado directly into individual bowls then mixed with the rest. This way any leftovers can be saved for the next couple days without worrying about sogginess, etc. Just leave anything that will get soggy separate to mix in just before you eat.
