  1. This spice cake is moist and flavourful. It’s a a nice easy fall dessert if you want something sweet to share with family/friends. I topped mine with pumpkin seeds and a bit of powdered sweetener. It also pairs really nicely with some whipped cream or ice cream. 🙂

    # Keto Pumpkin Spice Cake Recipe

    # Serves: 8 slices

    **Ingredients:**

    Pumpkin Spice Cake

    * 1 cup almond flour, 112g
    * 5 tbsp coconut flour, 35g
    * 1 1/2 tbsp arrowroot starch, 10g (cornstarch also works)
    * 1 tbsp baking powder
    * 1 tsp xanthan gum
    * 1/2 tsp baking soda
    * 1 tsp cinnamon
    * 1/2 tsp nutmeg
    * 1/4 tsp allspice
    * 1/4 tsp ginger
    * 1/4 tsp salt
    * 1/3 cup coconut oil, melted, 80g
    * 3/4 cup powdered monkfruit/erythritol sweetener, 144g
    * 2 large eggs, at room temperature
    * 1 1/2 tsp pure vanilla extract
    * 1/4 cup warm heavy cream, 60ml
    * 1/4 cup canned pumpkin, 60g
    * 1 tsp white vinegar

    Topping

    * 1/4 cup roasted pumpkin seeds, 30g (optional)

    **Directions:**

    1. Pre-heat oven to 325*F.
    2. In a bowl, whisk together the dry ingredients including; almond flour, coconut flour, arrowroot starch, baking powder, baking soda, cinnamon, nutmeg, allspice, ginger, xanthan gum and salt.
    3. In another larger bowl, whisk together the coconut oil and sweetener until smooth.
    4. Add the eggs, heavy cream, pumpkin, vanilla extract and vinegar and whisk very well.
    5. Add the dry ingredients to the wet and stir until a thick batter forms.
    6. Grease an 8×8 inch pan.
    7. Scrape the batter into the pan and use your hands or a spatula to spread it around and cover the bottom evenly.
    8. Top with roasted pumpkin seeds.
    9. Bake the cake for 28-35min or until a toothpick comes out almost completely clean and the top is lightly browned. The centre will also no longer be jiggly.
    10. Let it cool completely before slicing. You can also top it with a little extra powdered monkfruit sweetener at this time. Serve and enjoy your Keto Pumpkin Spice Cake!

  2. No offence but the first thing I thought about that presentation was that it looked like literal rotten food.

    Prolly tasty tho lmfao

  3. I 100% read that as *Space* cake** and clicked to see which drugs were keto. Lol

  4. I have a pumpkin pie dump cake recipe that I really miss, do you think I could use the dry ingredients from this recipe as a sub for the 1 box of spice cake mix I need for the dump cake recipe?

    Basically for the dump cake you mix all the wet ingredients and place it into a baking dish, and then the spice cake mix gets sprinkled on top with melted butter drizzled all over. After it bakes, you crack into the top crust to get into the pumpkin cake underneath ? I would love to add it back into my low carb Thanksgiving spread!

  5. Just a heads up, you may want to update the actual recipe part in your website. It doesn’t include any of the spices, you have to scroll up to the description part to find them. The pumpkin is also missing from the recipe part. Also the recipe says to include almond extract, but that part is not in the description part.

    As someone who almost always skips the description on recipe websites and just goes straight to the recipe, it was a bit confusing trying to find out what I was supposed to add.
