Keto Poppy Seed CheeseCake | Ricotta Poppy Seed CheeseCake

Base Ingredients:

1/2 cup almond flour

1/2 cup coconut flour

1 egg

50 grams of butter at room temperature

Cheese Filling Ingredients:

100 grams of poppy seeds

500 grams ricotta cheese

2 eggs

100 ml cream

1 tsp vanilla extract

1.5 tablespoons of sweetener

Method:

Pour boiling water over the poppy seeds and let it brew for 15-20 minutes. When the poppy seeds have absorbed all the water, blend the poppy seeds until a smooth paste.

Add ricotta cheese to a bowl, then add eggs, cream and sweetener. Blend together till smooth.
Divide the cheese mixture into 2 parts, approximately 2/3 part and 1/3 part. Add the poppy seeds to the smaller part and mix through.

Over the base, build the cake by thin layering with the poppy seed mixture, then the cheese only mixture. Repeat the layers till all mixture is used. On the top layer, mix the poppy and cheese parts with a fork or wooden stick

Bake in the oven at 160 degrees C for 45 minutes. Let cool in the refrigerator for 4-5 hours or better overnight.
