    INGREDIENTS

    1- 13oz canned organic coconut cream, chilled

    1 tsp vanilla extract

    4 drops of Stevia (optional)

    INSTRUCTIONS

    Chill coconut cream for 8 hours or overnight. Scoop out the coconut solids into the stand mixer or bowl. Whisk on medium for 5 minutes or until coconut cream becomes fluffy. If the cream is too thick, add some of the liquid from the can. Add in the vanilla extract and stevia drops if used. Whip for another 1-2 minutes or until the cream is the texture of whipped cream.

  2. One thing I like about Coconut Chia pudding is how well it freezes and thaws, so I can make batches and store them in individual 4oz mason jars in the freezer.

    How well do you think this recipe would freeze/thaw? Regular whip cream goes flat after just a handful of minutes, but I could see this coconut behaving differently. Thoughts?
