    * 1 lb of Prawns
    * 1/2 cup almond flour
    * 1 egg
    * 1 tsp hot sauce
    * 1 tbs water
    * 1 cup panko style crushed chicharrones
    * vegetable oil (I like peanut oil for this but canola or corn will work, just not olive oil.)

    Cocktail Sauce

    * 1/4 cup no sugar added ketchup
    * 1 tbs ground horseradish (less If you don’t like too much heat)
    * 1 tsp lemon juice

    Make the cocktail sauce first by combining all the above ingredients in a small dish and then cover and refrigerate

    Defrost, de-vein and butterfly prawns. Then dry very well, the better you dry them the more successful the “breading” will hold.

    Either purchase chicharrones already crushed or you can do it yourself. Use a food processor or a gallon zip-lock bag and gently (or violently) smash the pork rinds to fine sized pieces.

    Whisk the egg, hot sauce and water together in a bowl until well mixed.

    Using three different dishes (bowls or small pans) stage side by side in this order:

    * almond flour
    * egg mixture
    * chicharrones

    Dredge each prawn in the almond flour with one hand. Use your other “wet” hand to coat it in the egg mixture. Then back to your first “dry” hand to coat in chicharrones. Like me you will probably forget that step and create a nice thick batter on your fingers. The more completely you coat the prawns in each component the better the final result. Put prawns on a plate and let them rest.

    Take a medium saucepan and fill it a half of an inch with your oil. Place on medium heat.

    You want the oil to be between 325° to 375°F (162°-190°C)

    Add prawns in small batches of 5-6 and let cook for about 2-3 min until the side down is nice and golden brown. Gently flip and repeat for the other side.

    Once fully cooked move the batch to a draining area with paper towel or newspaper. Immediately add salt and pepper to taste (if you can resist eating one before they properly cool you are a stronger person then I.) repeat with remaining prawns.

    Plate with cocktail sauce, garnish and enjoy. This same process can be used with all sorts of fryables, fish calamari, zucchini etc…
