  1. Moist, tender carrot cake recipe made from scratch! This cake is quick and easy to make, versatile and utterly delicious.

    • Vegetable Oil – 1 1/4 cups

    • Eggs (Room Temperature) – 4

    • Pinch of Salt

    • Granulated Sugar – 1 cup

    • Lightly Packed Brown Sugar – 1/2 cup

    • All-Purpose Flour – 2 1/2 cup

    • Baking Powder – 1 1/4 tsp

    • Baking Soda – 1/2 tsp

    • Walnut (Coarsely Chopped) – 1/2 cup (OPTIONAL)

    • Butter (Grease Baking Dish)

    • Vanilla Extract – 2 tsp

    • Carrots (Peeled & Grated) – 3 cups (5-6 Medium)


    1. Preheat oven to 350°F (160°C).

    2. Grease 8-inch round/square baking dish with butter. Set aside.

    3. In a large bowl cream together oil, sugar, eggs, and brown sugar.

    4. Whisk until well combined.

    5. Fold in carrots and vanilla extract.

    6. To it add whisk together flour, baking soda, salt, and baking powder.

    7. Gradually mix the dry ingredients into the wet ingredients until well combined.

    8. Pour the batter evenly into the prepared baking dish.

    9. Baked for 35 to 45 minutes or until moist crumbs cling to a toothpick inserted into the center. Do not over bake. The cake will continue cooking as it cools.

    NOTE: I have not included spices (ground cinnamon, clove and nutmeg) in this recipe. You can add it if needed.
