  1. Kickin’ Chicken and Broccoli

    Main Ingredients:

    • 1 1/2 to 2 lbs. boneless skinless chicken breasts

    • 12 ounces broccoli florets

    • 1/2 Tbs minced garlic

    • 1 gallon Ziploc bag

    • 1/2 cup water

    Marinade Ingredients:

    • 1 Tbs blackening seasoning

    • 1 Tbs red pepper flakes

    • 2 Tbs oil

    Sauce Ingredients:

    • 1/2 cup rice vinegar

    • 2/3 cup water

    • Sugar substitute = to 1/2 cup regular sugar

    • 1 Tbs soy sauce

    • 1 Tbs minced garlic

    • 2 1/2 Tbs Sambal Oelek

    • 1/4 tsp xanthan gum

    Makes 4 servings

    Per Serving:

    323 calories / 5.76g fat / 3.47g net carbs / 61.84g protein


    1. Mix together marinade.

    2. Cube chicken into bite size pieces.

    3. Add chicken and marinade to Ziploc bag and mix until chicken is well coated.

    4. Place chicken in the refrigerator for 3 hours to overnight.

    5. Add chicken with marinade to a sauté pan on medium high heat and cook until chicken is done. Remove chicken.

    6. Add water, minced garlic and broccoli. Cover for 2-3 minutes.

    7. While broccoli steams, Add sauce ingredients to a separate bowl.

    8. Remove broccoli from pan and any excess liquid.

    9. Add sauce to pan and cook until thickened.

    10. Reduce heat to medium and stir in chicken and broccoli.

    11. Serve hot.

  2. A marinade based on some mix of other seasonings and instructions on how to sauté chicken and broccoli? Not very interesting, compelling, or helpful. I know how to make (or buy) my own spices and that’s the only “unique” thing about this recipe.
