  1. I do this in a crock pot. Let the ham hocks cook for about an hour before putting in the collards and the rest of the chicken stock. I’m a southern boy and if my grandma knew I cooked them in a crock pot she would be rolling around in her grave. But it works for me. (Sorry grandma)

  2. I do this in an instapot. Saute onion and garlic then wilt the greens so you can stuff more greens in. Dump everything in the pot, cook for 12 minutes on high pressure.

  3. Smoked Ham Hocks.
    Bundle of Collard Greens.
    Salt and pepper to taste.

Boil down ham hocks in chicken stock with onions and garlic. Drain through filter, let rest and skim off fat from the top. Shred/peel fat and skin off the ham hocks. Add greens and cook until desired consistency.

I made this in memory of my dad whom past away 3 years ago. He was a navy veteran and from Chicago. He always had this in the fridge.

  4. I recently started eating greens on a regular basis. I would recommend turnip greens too they come out great!

  5. A staple side when I smoke a brisket or pork shoulder. Yours is so much more visually appealing than mine though.

  6. The greens in the photo look terribly under cooked. I understand that that’s a common technique for food photography, but it’s just weird for collards.
