  1. For your consideration, I like to put a piece of parchment paper on top of the tin foil before placing on my food for cooking.

    I do everything else the same but I use the parchment paper keep the aluminum from leaching into the food.

    I have read that this is particularly important if you use lemon juice or any type of acidic sauce on your food while cooking. I understand that the acid accelerates the breakdown of the surface of the aluminum foil. The parchment paper has a negligible effect on the cooking properties, it’s just an easy way to add a protective layer between the food and the tin foil.

  2. **Tin Foil Salmon with Asparagus**

    1-2 servings

    Quick, easy, sugar free and delicious! Perfect salmon every time.

    **Ingredients:**

    2 TBSP Swerve Brown

    1 TBSP lemon juice

    1 TBSP tamari

    2 TBSP EVOO

    1 clove garlic minced

    ½ tsp. fresh cracked pepper

    ½ tsp. salt

    Skin on salmon portions

    6-8 asparagus spears

    1 piece of tinfoil for each salmon portion

    Ziploc bag

    **Directions:**

    Place marinade ingredients into the Ziploc bag and mix well.

    Add salmon portions.

    Seal the bag burping the air out as you seal.

    Marinate in the fridge for 1-3 hours.

    Preheat the grill to medium high heat.

    Fold each piece of tinfoil into a dish with sides.

    Place a piece of salmon in the tinfoil, skin side down.

    Pour a little marinade on top of the salmon.

    Nestle the asparagus beside the salmon.

    Place the tinfoil salmon trays on the grill and cook over indirect heat for about 15 minutes.

    Optional: After the salmon is cooked, you can grill meat side down for 1 minute to add some nice presentation grill marks.

    Serve in the tinfoil tray with the asparagus.

  4. Sockeye salmon? Looks kinda dry, sockeye always turns out dry for me. I guess cuz they have less fat typically than the Norwegian Atlantic salmon I get
