**ingredients**
– 2lbs asparagus
– 26g finely shredded Parmesan
– 4oz prosciutto
– 4 tomatoes, seeds and goop removed, sliced
– 6 oz sliced mozzarella
– Basil
– 1t balsamic vinegar
– roast asparagus with Parmesan and salt & pepper at 400F for 15 min.
– stack tomato slice, basil, cheese, salt & pepper on a piece of prosciutto, roll tightly, repeat (mine made 15 bites, 3 per serving. Drizzle with balsamic.
