Ingredients
============
2 tablespoons of Refined Oil
1 medium size Onion
1 teaspoon Ginger Garlic Green Chili paste
1 medium size Capsicum
1 medium size Tomato
2 Green Chili
1 teaspoon Black Pepper
2 tablespoons Oregano seasoning
1 teaspoon Salt
200 gm boneless minced Chicken
Small quantity Water
2 Eggplants
Small quantity Refined Oil for brushing
Pinch of Salt
Grated Cheese
Small amount of Chili Flakes
Preparation steps

First, prepare the stuffing. Add 2 tablespoons of Refined Oil in Kadhai.
Add 1 medium size finely chopped Onion and fry till brownish colour.
Add 1 teaspoon Ginger Garlic Green Chili paste and continue stirring.
Add 1 medium size finely chopped Capsicum and continue stirring.
Add 1 medium size finely chopped Tomato and continue stirring.
Add chopped 2 Green Chili.
Add 1 teaspoon Black Pepper.
Add 2 tablespoons Oregano seasoning.
Add 1 teaspoon Salt and continue stirring.
Add 200 gm boneless minced Chicken and mix properly.
Add little Water and mix properly.
Cover and cook for 10 minutes.
After 10 minutes, open the cover. Stuffing is ready.
Next, bake 2 Eggplants.
Cut the Eggplant in middle.
Brush Refined Oil on Eggplant.
Add pinch of Salt on Eggplant.
Place the Eggplant on baking tray.
Pre heat Oven for 10 minutes at 190 degree celsius.
After 10 minutes pre heat, bake Eggplant for 15 minutes at 190 degree celsius.
After 15 minutes baking, take out the Eggplant from oven.
Make some space in baked Eggplant using spoon and knife for stuffing.
Add Chicken vegetable stuffing in the Eggplant.
Add grated Cheese on stuffing.
Place stuffed Eggplant on baking tray.
Pre heat Oven for 10 minutes at 190 degree celsius.
After 10 minutes pre heat, bake stuffed Eggplant for 10 minutes at 190 degree celsius.
After 10 minutes baking, stuffed Eggplant is well baked and Cheese is fully melted.
Garnish with small amount of Chili Flakes on top of Cheese before serving.
