  1. I got sick of drinking bone broth so I found a few keto matzo ball recipes online as a guide and came up with my own measurements after testing it out a few times.

    Matzo ball:

    1 cup almond flour
    2 eggs
    Salt, pinch of garlic powder, pinch of msg (optional)
    Pinch of baking soda (also optional, I’ve tried with and without and can’t really tell a difference)

    Whip eggs with seasoning in blender. Mix with almond flour and let set in fridge for up to 6 hours but no less than 2.
    Divide ‘matzo’ batter into four and roll into balls.
    Bring salted water to a low boil and gently place in water using ladle. Let them gently boil for 15 minutes.

    Carbs: 1.5 grams per ball
    Calories: 156

    I can post a chicken bone broth broth recipe if anyone’s interested but I don’t have the nutrition stats as it’s really hard to figure it out in a broth.

  2. How was it? I love Matzo ball soup and have tried to replicate with a carb quick recipe, a vital wheat gluten recipe and a lupin recipe. It’s never quite right, not even close enough to really enjoy.
