    **Ingredients**

    1 cup of Unsalted Butter

    3/4 a cup of Sugar

    1 Egg

    Juice from 1 Lemon (1/4 a cup)

    1 tbsp of Lemon Zest

    1/2 a tsp of Baking Powder

    2 1/2 cups of All Purpose Flour

    1/4 a tsp Salt

    1 cup of Strawberries, diced

    For the Strawberry Preserves:

    1/3 a cup of Strawberries

    1/2 a cup of Granulated Sugar

    1 cup of Water

    **Instructions**

    In a bowl cream together sugar and butter until combined thoroughly.

    Beat in an egg and mix together well until smooth. Add in lemon juice and mix thoroughly.

    In a separate bowl combine lemon zest flour, salt and baking powder. Add with wet ingredients and mix until smooth. Pour in strawberries and fold in together with the batter until evenly distributed throughout.

    Bake in the oven for 30-35 minutes or until a golden brown crust begins to appear. Use a toothpick to measure doneness, there should be just a bit of residue when the toothpick is inserted then removed.

    Make the Strawberry Preserves: In a saucepan, combine 1/3 a cup of strawberries, 1/2 a cup of granulated sugar and a cup of water. Cook over low heat until it begins to thicken, adding more water or sugar to control consistency if needed. Scoop over bars then allow to cool. After 10-15 minutes Serve and Enjoy!
