Requesting a few recipe suggestions please ( tres leches, Yogurt & bread)

Download I found this old tres leches recipe from the subreddit but looks like the recipe is gone https://www.reddit.com/r/ketorecipes/comments/7f1k9l/i_made_the_tres_leche_from_on_here_and_cant/

Also I want to maybe try making an simple keto yogurt maybe with coconut milk and store bought yogurt and capsule online as a starter sort of like this and wondered if anyone has tried making that https://mommypotamus.com/coconut-yogurt-recipe/

I was hoping i can make a keto yogurt and then maybe use the whey to make almond bread, but am not sure if keto almond flour bread taste good or satisfy that bread craving ?

  1. I’ve been looking into making yogurt and it seems the longer you let milk go the more lactose that is eaten up. Also straining the yogurt helps get rid of carbs and leaves fat and protein. Most unsweetened Greek yogurts have very minimal carbs. I would recommend regular milk to plant milk because it has protein. I was find myself not getting enough protein on keto. Greek yogurt is thicker and is great for baking as a bonus and adding baking soda alkalizes it and makes it incredible.

  2. Lookup fairlife milk yogurt in the instant pot (cold start). Super easy you just need the milk and a spoonful of pre-made yogurt but I’m sure you could use the yogurt capsules you have. Best yogurt I’ve ever had AND extremely low in carbs.

  3. I have several recipes. Here are two. I can post more if you would like me to.

    **Tres Leches Cake 2 Taryn Joy Filled Eats**

    8 whole eggs

    1/2 cup Trim Healthy Mama Gentle Sweet or my sweetener

    2 teaspoon vanilla

    1/2 cup unsweetened almond milk

    1/2 cup almond flour

    1/2 cup coconut flour

    1/2 cup ground golden flax or additional almond flour

    1 1/2 teaspoon baking powder

    1/4 teaspoon salt

    Topping

    1 recipe sugar free sweetened condensed milk

    1/3 cup half and half

    **Icing**

    1 pint heavy cream

    2 tbsp Trim Healthy Mama Gentle Sweet or my sweetener

    Preheat oven to 350 degrees. Spray a 9 x 13-inch pan with cooking spray.

    Beat eggs with 1/2 cup sweetener. Stir in almond milk and vanilla. Add baking mix, baking powder, and salt and mix until just combined. Pour into prepared pan and spread to even out the surface. Bake for 40 to 45 minutes or until golden and slightly firm to the touch in the middle. Cool to room temperature. Combine condensed milk and half and half in a small measuring cup. When cake is cool, gently pierce the surface with a fork every inch or so. Slowly drizzle on the sweetened condensed milk and half and half mixture. Allow the cake to absorb the milk mixture for 30 minutes. Meanwhile whip the cream. When stiff peaks form, add the sweetener. Spread over the surface of the cake, after it has absorbed the condensed milk.

    **Sweetened Condensed Milk Joy Filled Eats**

    ¼ cup heavy cream

    2 T. butter

    1/2 cup THM gentle sweet

    1 egg yolk

    Bring the heavy cream, 2 T. butter, and sweetener to a gentle boil and cook stirring frequently until it is light golden brown and thick enough to coat the back of a spoon. Remove from heat. Either cool until room temperature before stirring in the egg yolk OR, if you are impatient like me, very slowly pour over the egg yolk while whisking like crazy.

    **Tres Leches Cake Brenda Sugar-Free Mom**
    1/2 cup coconut flour
    1/2 tsp baking powder
    1 cup Swerve sweetener divided or other granulated sugar free substitute
    Pinch salt
    6 eggs, separated
    1/2 cup butter, melted, cooled
    1 tsp vanilla extract
    1 tsp vanilla stevia
    1/2 cup unsweetened coconut milk or unsweetened almond milk
    1/2 cup Half & Half
    1/2 cup heavy cream
    Optional: 1/4 cup Brandy
    2 cups Sugar Free Cannoli Frosting
    Preheat oven to 375 degrees F. Line a 9 inch spring form pan with parchment paper. Whisk the coconut flour, baking powder and 1/2 cup of Swerve together in a bowl. Set aside. Place the egg whites into a stand mixer with the remaining Swerve and blend until stiff peaks form. In another bowl whisk the egg yolks, butter, vanilla extract and vanilla stevia. Fold the coconut flour mixture into the egg yolk mixture. Gently fold in the stiffened egg whites in small batches into the coconut flour batter. Pour batter into pan and bake for 30 minutes. Allow to cool for about 20 minutes before removing from pan. Take a skewer stick and make holes in cake. In another bowl whisk together the coconut milk, Half & Half, heavy cream and optional brandy. Pour this over the cake into all the holes. Allow to stand for 30 minutes. Refrigerate for at least one hour before frosting. Frost and serve!
    **Cannoli Frosting Brenda Sugar-Free Mom**
    8 ounces ricotta cheese
    8 ounces mascarpone cheese or cream cheese
    4 ounces heavy whipping cream
    Few drops liquid vanilla stevia or to taste
    Place all ingredients into a stand mixer. Blend on high until mixture is a thickened smooth consistency. Taste and adjust the stevia or sweetener of choice.
