These Grilled Veggie Skewers pair well with any protein and make for the perfect side dish!
INGREDIENTS
1 medium Red Onion
2 Red Peppers
2 Orange Peppers
2 Medium Zucchini
FOR THE HERB SAUCE:
1/2 cup Olive Oil
4 Garlic Cloves
2 tbsp Parsley
2 tbsp Cilantro
1/2 tsp Salt
1/2 tsp Pepper

INSTRUCTIONS
Soak up to 10 wooden skewers in water for 30 minutes. Prep onion and pepper by chopping them into one-inch chunks. Cut the zucchini into rounds. Skewer the vegetables by alternating between onions, peppers, and zucchini. Start the grill. Meanwhile, make the herb sauce by combining all of the sauce ingredients. Season with salt and pepper to taste. Brush the skewers with olive oil and grill for 5 minutes per side or until desired grill marks are reached.
Remove from grill and brush with herb sauce.
