  1. Congrats on the new flour mix! I genuinely don’t bother with other keto recipe sites anymore because I know yours are going to work the first time I make them so I’m excited to give this a try ?

  2. Keto Rhubarb Custard Pie! I moved away from my family this past year and it was the first year I didn’t have rhubarb crisp and rhubarb muffins made by my Mom. Usually it grew in our garden and I was having a hard time finding it at stores.

Then the other day my super sweet elderly neighbour who overheard me talking about it brought a huge bundle of it over! It was so kind of him.

So that’s how I was able to make this delicious pie among other keto rhubarb desserts! This pie is easy to make and SO good. The sweet custard filling with the tangy rhubarb and cinnamon crust is a perfect combination.

I hope you guys enjoy this one. 🙂

*P.S. I know I shouldn’t promote things here but you guys feel like my family, haha and I’m just a small business owner (literally, my Dad and his friend print the stickers for my mixes!). You’ve been through all my baking with me and over the past year I’ve been working on something for you guys that I’m so excited about. I just want to let you know that I released a Keto Bread & Pastry Mix today. You can use it as a 1:1 for white flour in a ton of recipes. I spent forever perfecting the bread it can make and I’m extremely proud of it. If anyone is at all interested I will put a little link to the page here where I’ve added a lot more information. 🙂 [**Keto Bread and Pastry Flour**](https://mouthwateringmotivation.com/product/mouthwatering-motivation-bread-pastry-flour/)

    # Keto Rhubarb Custard Pie Recipe

    Serves: 8 slices
    Ingredients:
    **Crust:**
    – 1 cup almond flour, 112g
    – 3 tbsp coconut flour, 21g
    – 3 tbsp powdered monkfruit sweetener, 36g
    – 1/4 tsp cinnamon
    – 1/2 tsp xanthan gum, optional
    – 1/8 tsp salt
    – 1/4 cup melted butter, 60g
    – 1 whisked egg
    – 1/4 tsp vanilla extract

    **Rhubarb Pie Filling:**
    – 2 eggs
    – 2/3 cup heavy cream, 160ml
    – 2/3 cup powdered monkfruit sweetener, 135g
    – 1/2 tsp vanilla extract
    – 1 1/2 tbsp coconut flour, 10g
    – 1/4 tsp xanthan gum (or another 2 tsp coconut flour)
    – 1/4 tsp cinnamon
    – pinch of salt
    – 1 1/2 cups diced rhubarb, 170g – 200g

    **Directions:**
    1. Pre-heat the oven to 325*F.
    2. Add the almond flour, coconut flour, 3 tbsp powdered monkfruit sweetener, cinnamon, xanthan gum and salt to a medium bowl. Whisk to combine.
    3. Add the melted butter and whisked eggs and mix again until you get a thick, slightly crumbly dough.
    4. Butter a 9 – inch pie pan and then press the mixture into the bottom of it, going up the edges slightly.
    5. Use a fork to poke holes all over the crust to prevent it from rising at it bakes.
    6. Bake the crust for 10 minutes.
    7. Meanwhile, make the filling by whisking together the 2 eggs in a large bowl.
    8. Add the heavy cream, sweetener, vanilla extract, coconut flour, xanthan gum, cinnamon and salt. Whisk again until everything is very well combined.
    9. Once your crust is finished baking, pour the diced rhubarb into it and spread it out evenly.
    10. Then pour your filling on top of the rhubarb. Only pour until you reach the top edge of the pie crust. If you have any extra filling you can save it and bake it on it’s own with diced rhubarb as a mini custard!
    11. Bake the pie on the middle oven rack for roughly 33min. Gently tent the pie with tinfoil part way through if you notice the crust browning too quickly.
    12. Let the pie cool completely at room temperature before attempting to slice. (Sometimes I refrigerate it on a towel to cool it faster then heat slices a little in the microwave before serving). Enjoy your Keto Rhubarb Custard Pie!

  3. Looks like a quiche! Wonder if you could make the custard savory w/o the sweetener, and add some bacon/ham, cheese, etc.

  4. I’m not sure how or if the presentation of this could be fixed. It looks like vomit although I’m sure it tastes better than it looks.

  5. I grew up eating this pie. It’s my favorite pie. Thanks for sharing a keto version!
