  1. Based off [this recipe](https://www.wholesomeyum.com/recipes/low-carb-crack-slaw-egg-roll-in-a-bowl-recipe/) but with some small tweaks.

    #Ingredients

    1. 1T olive oil

    2. 3 cloves garlic, minced

    3. 3T fresh ginger, minced

    4. 1lb ground beef

    5. Ground pepper, to taste

    6. 1/2 bell pepper, sliced into strips

    7. 4 cups (one bag, for me) coleslaw mix

    8. 2T coconut aminos

    9. 2T low sodium soya sauce

    10. 2 tsp sesame oil

    11. 2 stalks green onion, chopped

    ##Instructions

    1. Heat oil in a large saute pan over medium-high heat. Add garlic and ginger. Saute for about a minute, until fragrant.

    2. Add ground beef. Season with black pepper. Cook until browned, about 7-10 minutes

    3. Reduce heat to medium. Add the bell pepper, coleslaw mix and coconut aminos/soya sauce. Stir to coat. Cover and cook for about 5 minutes, until the cabbage and peppers are tender.

    4. Remove from heat. Stir in the sesame oil and green onions.

    I also fried an egg in butter and topped mine with that which I think *really* made it for me. And the cucumbers were sliced and sat in some apple cider vinegar while I cooked the rest (extra-quick pickle, if you will). Would also be good with sesame seeds sprinkled on top but I had none ??‍♀️

    For 1/3 of the pan (without the egg)

    *Calories*: 366

    *Net Carbs*: 10.5g

    *Fat*: 20g

  2. I love egg roll in a bowl! First time I had it topped with a fried egg, it was a game changer. SO GOOD!

  3. Just had this for lunch and wow! YUM! I forget to get green onions, so that will be tomorrow’s quick trip to the supermarket. The fried egg really made a big difference.

    **Those pickles!** I cut up one big cuke and ate about six or seven nice slices. YUMMY! I can’t wait for tomorrow’s lunch when the rest will have been sitting in the brine for 24 hrs…
