    4 lbs Chicken Thighs

    1 cup Cilantro

    3 limes, juiced

    4 garlic cloves

    1/4 cup Olive Oil

    3/4 cup Tequila

    INSTRUCTIONS
    Combine cilantro, lime juice, garlic, olive oil, and tequila in a food processor. Process until it resembles a sauce. Meanwhile, season the chicken thighs with salt and pepper and place them into a zip lock bag. Pour marinade into the ziplock bag with the chicken and marinade for at least 1 hour, overnight if you can. Grill until the chicken has reached an internal temperature of 165°F.

  2. I would recommend this variation if you don’t have a food processor, and/or want the taste of tequila without the alcohol:
    Heat olive oil in a pan over medium. Add garlic and stir; cook until fragrant. Add lime juice and tequila and bring to a boil; turn the heat down and simmer, adding cilantro, until mixture is reduced.
    Pour marinade over chicken thighs and place in the oven at 350 until browned and temp reaches 165, brush them and put them in a smoker for 40 min, or put them in your air fryer on air crisp for 20 min, flipping halfway through.
