  1. This was so good! I had quite a bit of extra calories at the end of the day, so I splurged with extra stuff like peanut butter and strawberries. Those could all be omitted for lower cal/carbs.

    #Ingredients

    • 1 Tablespoon Butter, melted

    • 3 Tbsp Almond flour

    • 2 Tablespoons erythritol

    • 1 Tablespoon unsweetened cocoa powder

    • 2 Teaspoons Sugar free Peanut butter

    • ½ teaspoon Baking powder

    • 1 Egg, beaten

    • Splash of vanilla

    • 1 Tablespoon Sugar free Chocolate Chips

    ##Instructions

    1. In a microwave safe mug or ramekin, melt butter until soft. About 10-20 seconds.

    2. Add almond flour, sweetener, cocoa powder, baking powder, vanilla and egg. Stir until well mixed.

    3. Drop small bits of Peanut butter over top. Sprinkle chocolate chips.

    4. Microwave for 1 min and check. May need another 15 seconds or so, but don’t overcook.

    5. For this one, I topped it with two sliced strawberries and a dribble of heavy cream.

    **Macros (with strawberries and cream):**

    Calories: 440

    Net carbs: 7g

    Protein: 14.7g

    Fat: 36.4g
