Thai Turkey Meatball Noodle Soup!

*PSA – If you like Asian rice or glass noodles you will like this substitute. If you are looking for a traditional texture pasta this might or might not work for you. As a low carb option for Asian dishes this was wonderful. There was no odor, no rinsing and the texture reminds me of Glass noodles.*

## Ingredients

* 1 bunch of Cilantro , stems chopped, leaves reserved
* Splash of Avocado oil
* 2 garlic cloves
* 1.5 pounds ground turkey
* 2 tbsp fish sauce
* 4 tbsp Thai red curry paste
* 2 cans coconut milk
* 4 cups chicken or vegetable stock
* Lime Juice / zest to taste
* Low Carb Veggies ( i use eggplant,basil,mushrooms, leeks)

Directions:

* **STEP 1,** Put the Cilantro stems and garlic in a food processor, pulse until finely chopped, add the turkey and 1 tsp of the fish sauce, and blend again. Roll into meatballs about 3cm in diameter.
* **STEP 2,** In a saucepan, saute curry paste and leeks with a splash of avocado oil for 2-3 mins. Pour in the coconut milk, stock, lime zest and juice, and remaining fish sauce. Bring to a simmer, add the meatballs and cook for 5 mins. Add the vegetables and cook for 5 mins more, or until the meatballs are cooked through.
* **STEP 3,** Add the noodles to warm through just before serving. Season, pour into bowls and top with coriander leaves. Recipe

    The coconut milk kicked me out of ketosis….
    Use unsweetened full fat coconut milk!
