  1. You seriously went from a keto infant to a full grown mature keto adult with a meal like this my friend! Congrats and welcome to the club.

    Were the tacos as delicious as they look?

  2. Appreciate the picture is a little poor – But the tacos were crunchy, and contained seasoned chicken, red onion, lettuce, sour cream (quite a lot), siracha and parsley.

    Recipe for cheese tacos:

    Aprox 20g of full-fat chedder cheese per taco:

    Place parchment on a plate, and place the cheese in a thin layer on the parchment paper. Heat on high (microwave) for 2-4 minutes, untill cheese is browning on the outside.

    Quickly take cheese out the microwave using the parchment, and place between two jars so that the cheese forms a shape of a taco – Leave to hardern for about 2 minutes – Viola! Easy taco.

    For meat (per taco)

    Dice up half a chicken thigh into bitesize pieces, and fry on medium heat until well browned. Add 1/2 tsp Cumin, Garlic Powder, Onion Powder, Paprika and mix. add lime juice to taste.

    These tacos in total were aproximately 2.5 net carbs each (much of which came from Siracha). Very tasty – Wouldn’t know it wasn’t a real taco!

    A few things to keep in mind when starting keto, don’t worry too much about calories at first because the food you eat will keep you fuller longer and you end up eating less calories than you need.

    Also, don’t forget electrolytes. They will help you get through the dreaded keto flu. A dash of see salt or lite salt as it has potassium as well with a glass of water will do the trick.

    Finally, if you get into a stall and you stop losing weight, look into eating more whole food instead of processed foods like keto tortillas, breads and sweets. For some (like me) they hinder the weight loss more than they help.

I found a bunch of recipes at a neat little blog site along with some pretty cool tips, it’s amazing what you find on the web these days, especially when you can grt something tangible from it. is the blog where I found the Keto resources. I’m slowly building a quality list of places where there is good solid information and even tips and ideas for baking Keto style.

    Here’s one of my favorites…

    Spinich Mozerella-stuffed burgers

    Makes 4 patties, enough for 4 people

    1½ lbs ground chuck
    1 teaspoon salt
    ¾ teaspoon ground black pepper
    2 cups fresh spinach, firmly packed
    ½ cup shredded mozzarella cheese (about 4 oz)
    2 tablespoons grated Parmesan cheese


    In a medium bowl, combine ground beef, salt, and pepper.
    Scoop about ⅓ cup of mixture and with dampened hands shape into 8 patties about ½-inch thick. Place in the refrigerator.
    Place spinach in saucepan over medium-high heat. Cover and cook for 2 minutes, until wilted.
    Drain and let cool. With your hands squeeze the spinach to extract as much liquid as possible.
    Transfer to a cutting board, chop the spinach, and place in a bowl.
    Stir in mozzarella cheese and Parmesan.
    Scoop about ¼ cup of stuffing and mound in the center of 4 patties,
    Cover with remaining 4 patties, and seal the edges by pressing firmly together.
    Cup each patty with your hands to round out the edges, and press on the top to flatten slightly into a single thick patty.
    Heat a grill or a grill pan to medium-high (if you’re using an outdoor grill lightly oil the grill grates).
    Grill burgers for 5 to 6 minutes on each side.

    Nutrition facts

    One patty yields 414 calories, 29 grams of fat, 1 gram of carbs, and 36 grams of protein.

  13. I don’t know what your usual meal looks like but you aren’t going to lose any weight eating that much fat. But you will get into keto, so that’s the first step
