    1 Rotisserie Chicken, De-Boned

    Reserved bones from Rotisserie Chicken

    1 lb ground chicken

    1/2 oz Pork Rinds

    2 Eggs

    2 1/2 Quarts Water

    2 Tsp Chicken Base

    1/2 Cup Heavy Cream

    Salt and Black Pepper

    1) De-bone your rotisserie chicken, reserving the bones.

    2) Place the bones into a 4-quart pot along with 2 1/2 quarts of water. Bring this to a boil and let boil on medium-high heat for 10 minutes.

    3) During this 10 minutes, add your ground chicken, pork rinds, and eggs to a blender or food processor and blend on low for 1 minute.

    4) Also, take this time to chop your chicken into small bit-sized pieces.

    5) Reduce the heat of your stock to medium-low and add your chicken base.

    6) Now, with two spoons, scrape your dough into your simmering water. Repeat until all of the batter has been used up and let simmer for 6-7 minutes, or until the largest dumping is no longer raw in the middle.

    7) Place 2 cups of your stock along with 1/2 cup of heavy cream in a pan and reduce by half or until it’s as thickened as you want it to be. Taste for salt and add a generous amount of black pepper.

    8) In a bowl, add a handful of your chopped-up chicken and break up some dumplings on top of that. Pour over your thickened broth and enjoy.
