Keto Recipe: Made my gf a keto carrot cake! 5.5 net carbs per slice.

Looks much better than the low carb sugar-free cheesecake I made for my husband’s bday ? also, upvoted for the giant vat of Cafe Bustelo…that’s the stuff??

When you say 5.5 net carbs per slice, how many slices out of the cake?

It’s the thought that counts

Recipe for the cake:
3 cups of almond flour.
1 cup of coconut flour (ran out of almond flour lol).
1 cup of monkfruit sweetener.
1 cup shredded carrots
1tsp cinnamon
1tsp nutmeg
4-5 eggs
Mix and place into a baking sheet. I pressed the batter down to flatten it
Place into oven at 350degrees for 30 minutes. I kept poking it with a toothpick to make sure it was done.
Recipe for buttercream:
8oz of cream cheese,
4oz of butter
1/2 cup of “Swerve” confectioner sugar replacement. Combine and frost the cake. I added some food coloring to what I had left and put it in a frosting bag to make the little orange flowers. It’s a delicious cake. I read 4 different recipes to use the one. I also have made the non-keto “Americas Test Kitchen” recipe for carrot cake so that inspired the pecans. Enjoy!
