2 tablespoons of Mount Hagen organic instant coffee, 2 tablespoons of confectioner’s erythritol, 1 tablespoon cocoa powder and 2 tablespoons of boiling water in a bowl. Whip with a hand mixer for 3 – 5 minutes until stiff peaks form.
Add 1 teaspoon (or more to taste!) of almond extract and 1 teaspoon of confectioners erythritol if more sweetness is desired, to coconut milk and pour over lots of ice in a big glass. Top with the whipped coffee and Lily’s salted caramel dark chocolate shavings!
EDIT: Adding the cocoa powder to the milk instead of the coffee whip might be better. It seems to result in inconsistent thickness / low whippy-ness.
