Pan de Bono/ Queso (Cheese Bread)

* 1 cup almond flour
* 1/8 cup coconut flour
* 1/2 tsp baking powder
* 1/4 tsp salt
* 1 tbsp granulated sweetener of choice
* 1 1/2 cup of queso fresco
* 1 1/2 tbsp butter, room temperature
* 1 egg

1. Pre-heat oven at 425ºF (220ºC).
2. Hand mix the almond flour, coconut flour, baking powder, sweetener and salt.
3. Now add the queso fresco, butter, and egg and mix a few seconds to incorporate them with the dry mix.
4. Form small balls (about the size of a golf ball) and place them on a cookie sheet lined with parchment paper or a baking pan greased with butter. You can also roll out the ball to make a string about ½ inch (1 cm) thick and pinch the ends together to end up with a bagel looking pan de bono.
5. Bake the pan de bonos for about 20-25 minutes or until golden brown.

Makes about 8 total pan de bonos (I ate one before taking the photo)

This is more dense than the original pan de bono. In hindsight, I think this is due to the almond flour and butter, and the lack of whipping action from a food processor/ blender. I assume that one may use less almond flour, more coconut flour for a more spongey, airy bread, omit the butter, and maybe beat the egg whites separately and fold them into the dough – but this is still delicious and the texture is pleasant. I eat mine with yogurt.
