#Chicken Shrimp Zoodle Alfredo
**Serves 10**
(This makes a large pan of Alfredo, so feel free to cut the recipe in half)
* 4 medium zucchini, spiraled/spiralized
* 2.5 lbs chicken thighs, cubed
* 2 lbs jumbo raw unpeeled shrimp – (feel free to peel your shrimp at any point in this process, it doesn’t matter too much)
* 2 tbsp unsalted butter (use 1 tbsp salt below if using salted butter)
* 4 cups heavy whipping cream
* 4 cups shredded Parmesan cheese
* Spices (use half for shrimp, and other half for chicken):
* 4 tbsp parsley
* 4 tbsp oregano
* 4 tbsp Rosemary
* 4 tbsp Thyme
* 2 tbsp salt (use 1 tbsp salt if using salted butter)
* 2 tbsp bouillon seasoning (optional)
* 2 tbsp olive oil
* Grated Parmesan cheese (optional)
Directions:
– Place the chicken in a bowl and coat with half the spices, drizzle 1 tbsp of olive oil and toss. Do the same for the shrimp with the other half of the spices and olive oil.
– In a pan, cook the chicken at medium-high heat until all the pink is gone. Set aside. Do the same for the shrimp, until all the shrimp turn pink. Set aside.
– Using the same pan, melt all the butter, making sure to not let it turn brown.
– Add the heavy cream in and stir till your mixture begins to boil.
– Add in the Parmesan cheese two cups at a time, making sure your first addition is completely melted before adding in the next one.
– Let simmer for about 5 minutes then turn off the stove.
– Mix in your shrimp and chicken; cover pan with lid.
– After about 5 minutes, uncover the pan and mix in your zoodles with tongs or a fork.
– (Optional) sprinkle in grated parmesan cheese.
– Serve and enjoy!
