    Ingredients:

    For Cooking & Blending Tomatoes:

    • Tomatoes – 4 Medium

    • Oil – 3 tbsp

    • Mustard Seeds – 1 tsp

    • Cumin Seeds – 1 1/2 tsp

    • Dried Red Chillies – 2 broken

    • Urad Dal – 2 tsp

    • Chopped Curry Leaves

    • Methi Seeds – 1/2 tsp

    • Chopped Curry Leaves

    • Green Chillies – 2 Slit

    • Garlic – 4 Cloves

    • Few Ginger Pieces

    • Asafoetida/Hing – 1/2 tsp

    • Turmeric/Haldi – 1 tsp

    • Salt – 1 1/2 tsp

    • Chopped Coriander

    • Jaggery (Optional)

    • Tamarind (Optional)

    For Tempering:

    • Oil – 2 tbsp

    • Mustard Seeds – 1 tsp

    • Cumin Seeds – 1 tsp

    • Dried Red Chillies – 2 broken

    • Urad Dal – 2 tsp

    • Chopped Curry Leaves

    Method:

    Cooking And Blending Tomatoes:

    1. Heat oil on a low flame, saute mustard seeds, cumin seeds, urad dal, methi seeds, dried red chilli, green chilli, hing, ginger &arlic cloves.

    2. Saute for 2 mins or until the raw smell or ginger and garlic goes away.

    3. Then add chopped tomatoes, turmeric, and salt. Add chopped corinader leaves.

    4. Add tamarind and jaggery. This step is optional.

    5. Stir and saute till the tomatoes soften. About 6 to 7 minutes on a low flame.

    6. Once the tomato mixture cools, add them to a grinder or small blender.

    7. Grind to a smooth paste.

    Tempering:

    1. In the same pan or different pan, heat oil.

    2. Add the mustard seeds and crackle them.

    3. Then add cumin seeds, urad dal, broken red chilli, and curry leaves. Saute till the curry leaves become crisp.

    4. Then add the ground tomato paste. Stir well.

    5. Saute for 3 to 4 minutes on a low flame. Check the taste and add more salt if required.

    Stir again. The chutney is done and ready to be served.

    This tomato chutney pairs extremely well with idli, dosa, uttapam or vada varieties. You can even serve this chutney with pakoras.
