  1. Delicious, easy, and quick keto pancakes. Serve with syrup and customize with your choice of toppings, like pecans, whipped cream, or blueberry jam. If you are strictly Keto, leave out the sugar.



    Prep :5 mins

    Cook:15 mins



    2 ounces cream cheese, softened

    2 eggs

    1 teaspoon white sugar

    ½ teaspoon ground cinnamon

    cooking spray




    Step 1

    Combine cream cheese, eggs, sugar, and cinnamon in a blender; blend until smooth. Let rest 2 minutes or lightly tap on counter to remove bubbles.

    Step 2

    Heat a skillet over medium heat and grease with cooking spray. Pour 1/4 of the batter into the skillet; cook until bubbles start to form, about 2 minutes. Flip and cook until cooked through, about 1 minute. Transfer to a clean plate. Repeat with remaining batter.

  2. Ooo, thanks for sharing, these were a real treat.

    I subbed erythritol for the sugar and neufchatel for the cream cheese. Topped with butter, whipped cream, and strawberries. Yum.

    They do turn out very flat, like in the picture. More like crepes than pancakes. I wonder if 1/4 tsp backing powder might give them some lift…
