  1. So, I had some leftover shredded slow cooked crocodile flavored for Mexican style tacos and some pizza sauce…so decided to make a frittata and it was quite nice.

    2 Large eggs
    100 g of egg white
    85 g of shredded meat (in my case crocodile)
    75 g of pizza sauce (homemade, so low carb)

    Directions (At least how I made it):
    Pre-heat oven to 180C.
    Mix eggs and egg white after adding salt and pepper.
    Place 1/2 T of lard or oil of choice in small cast iron pan.
    Heat pan on stove on medium low.
    When pan is hot, pour in egg mixture and cover.
    Cook until the bottom is set.
    Remove from stove and add toppings.
    Place in oven and bake until firm all the way through.

    534 Calories, 5.5 g Net Carbs, 48 g Protein, 31 g Fat

    Obviously, I don’t expect people to copy this recipe since there really isn’t detail in the making of the shredded meat and pizza sauce, but it is more of an idea post. It might give someone an idea on what they can do with leftovers.
