  1. I’ve made this many times and it’s delicious. A few things I’ve changed over time: there’s no need to heat the filling. Use softened cream cheese and mix well with the other filling ingredients, add a little of the spice mix to the filling because it’s a little bland. I use paprika instead of chili powder.

    Also good with kale or chopped up broccoli in place of the spinach.

  2. Printable Recipe: [](

    Ingredients for 4 servings

    * 4 chicken breasts boneless, skinless
    * 1 teaspoon chili powder
    * 1 teaspoon salt
    * ¼ teaspoon garlic powder
    * ¼ teaspoon onion powder
    * 4 oz cream cheese
    * ¼ cup grated Parmesan
    * ¼ cup mozzarella cheese
    * 10 oz frozen spinach
    * 1 teaspoon garlic minced
    * ½ teaspoon pepper
    * 1 tablespoon olive oil

    1. Make the Creamy Spinach Filling: Add the spinach to a non-stick pan over medium heat and stir until wilted. Add softened cream cheese and stir until well incorporated. Let it cool slightly and combine with parmesan cheese, mozzarella, minced garlic, salt, and pepper.
    2. Cut a pocket into your chicken breasts. Using a sharp knife slice through the chicken breast, creating a pocket.
    3. Season: Season the chicken with chili powder, onion powder salt, pepper, garlic powder.
    4. Fill the chicken with the spinach filling and fold it, and use toothpicks to seal the cream cheese.
    5. Place the chicken breast into a baking dish and drizzle oil or melted butter.
    6. Bake for about 25-30 minutes at 375°F / 190°C or until the chicken is cooked through.

  3. I bet you the filling tastes great as a dip for celery or homemade low carb tortilla chips.

  4. I saw another recipe like this where bacon, broccoli and bell pepper are also in the filling.

  5. I’ve made this multiple times now. I even brought it to a potluck I went to a few weeks ago and everyone loved it. Yum!

  6. I made this tonight and used some herb goat cheese to supplement the cream cheese and it was so good! Great recipe, thank you for sharing!
