  1. I found a recipe online but didn’t have all the ingredients so I tweaked it and added my own flair to it.

    -4 bone-in pork chops

    -olive oil

    -butter

    -Smoked Paprika

    -Thyme (I had dried thyme)

    -Dried Tarragon

    -Umami Mushroom seasoning (found it at target)

    -Fresh Parsley, small bunch

    -3 cloves of Garlic

    -1/4 cup Red onion (I think shallots or a yellow onion would’ve been better!)

    -3/4 cup Heavy Cream

    -1/4 cup Chicken Stock

    -Salt to taste

    -Pepper to taste

    Directions:

    -Preheat oven to 350 F

    -Heat up your cast iron, and heat up about 2 Tbsp olive oil (you can use a regular pan too I used my cast iron)

    -Rub all 4 pork chops with salt, pepper, and smoked paprika while your pan heats up

    -Put chops in pan and cook for 4-5 minutes (get a nice sear) then flip them.

    -While your chops are cooking shop up your onion and garlic, I used 1/4 cup onion and 3 cloves of garlic.

    -Once you get a sear on both sides I threw the whole pan in the oven for about 4 minutes (they were thick chops!)

    -Remove chops to a plate to rest, **leave the juices in the pan!**

    -Put 2 tbsp of butter in pan and add onion and garlic

    -Cook them until they start to soften up and add you 3/4 heavy cream and 1/4 cup of chicken stock

    -Cook that until you start to see bubbles and reduce the heat letting it thicken.

    -Add umami mushroom seasoning, tarragon, and thyme (I eyeballed it about 1/2tbsp of each?)

    -When sauce is the consistency you like add salt, pepper, and fresh parsley.

    -Plate your chops and put the sauce on top. Enjoy!
