    Half a cup of raw rice (soaked for 15 minutes)

    1/4 the cup of grated coconut

    200 gm of jaggery

    2 cucumbers boiled and chopped into square pieces

    Soaked raw rice and grated coconut paste

    Directions 1:

    Take a mixer jar, add the boiled cucumber. Prepare a fine paste. After preparing a paste, add the cucumber paste to a mixer jar. Mix it well thoroughly.

    Directions 2:

    Take a heavy-based pan and add the jaggery. Boil the jaggery until it dissolves. Combine all the mixture of:

    Grinded rice, grated coconut, and cucumber paste. Stir well continuously until the mixture is thick in consistency. Add dry fruits and mix it well thoroughly. Add 3-4 tbsp of ghee. Mix it well thoroughly. Add 1/4th spoon of elaichi powder and mix it well thoroughly. Now, the cucumber kheer is ready to serve!

    Adding the milk is optional.
