  1. 1/2 cup melted butter
    1 cup erythritol
    1 tsp vanilla
    1 egg
    2 cups almond meal
    1/2 tsp xanthan gum
    1/2 tsp baking powder
    1/4 tsp salt
    1/2 cup sugar free choc chips

    Beat melted butter with erythritol, then add egg and vanilla and beat again. Add dry ingredients (except choc chips) and then fold in choc chips. Roll into 12 balls and put on a baking try, bake at 180 degC (355f) for about 15-17 mins til they are golden. Remove from oven and leave on the tray for at least half an hour. Enjoy!!

  2. This looks great! Do you think the almond meal could be substituted for almond flour?

  3. Have you tried using isomalt? Had a keto cookie with it recently. It had a texture closer to regular cookies. Itswhy im planning on buying isomalt for my keto cookies.

  4. Looks so good!what does the xantan gum do in these? Any guess what would happen if I left it out?
