    *Makes 5 large enchiladas (or 10 small if you cut them in half.) A large enchilada has approximately 10.6 net grams of carbs; a small has approximately 5.3 net grams of carbs) Pictured is 1 large, cut in half.*

    **INGREDIENTS: Enchilada + Filling**

    – 5 Carb Smart Whole Grain 12” Tortillas
    – 1 ½ LB Ground Beef
    – 1 SM Can Rotel
    – ½ Packet Taco Seasoning
    – ¼ Cup Enchilada Sauce [Inside Filling Mixture] (See Recipe Below OR find low-carb sauce at your local store)
    – 1 Cup Enchilada Sauce [On Top Of Enchiladas]
    – ¼ Cup Sour Cream
    – 1 Cup Shredded Cheddar
    – 2 Finely Chopped Jalapeños

    **INGREDIENTS: Enchilada Sauce**

    1. 2 TBS Butter
    2. 3 Cloves Garlic – Minced
    3. 2 TBS Chili Powder
    4. 2 TSP Cumin
    5. 2 TSP Onion Powder
    6. 1 TSP Swerve
    7. ½ TSP Salt
    8. ¼ TSP Cayenne Pepper
    9. ⅛ TSP Ground Cinnamon
    10. 15 OZ Tomato Sauce

    **DIRECTIONS: Enchilada Sauce**
    *Makes 2 cups. 1/4 cup has 3g of net carbs.*

    1. Melt the butter in a small sauce pan over medium heat.
    2. Add in the garlic and remaining spices and cook, stirring for 1-2 mins. Add tomato sauce and cook for 3 mins while stirring.

    **DIRECTIONS: Main Dish**

    1. Preheat oven to 400° F. On medium heat, brown your ground beef, jalapeños and Rotel. Drain most of the grease. Add your taco seasoning and enchilada sauce and heat until combined.
    2. In a baking dish, spray with nonstick spray. Fill your tortillas with beef mixture. (Optional: I load mine inside with cheese, but feel free to omit.)
    3. Take Enchilada sauce and mix in sour cream. Pour over Enchiladas and cover with shredder cheddar. Bake for 20-25 minutes and you will make this weekly. ?

  2. Is “carb smart” the brand? I haven’t been able to find low carb tortillas that are larger than 10 inches.

  3. so… correct me if i’m wrong, but these are just enchiladas with homemade sauce, using the mission carb smart tortillas instead of regular ones?

  4. I make keto enchiladas all the time, all you need is low carb tortillas everything else is keto

  5. I make these all the time too! At least once a week, since the leftovers are great lunches. I’ve been using Las Palmas red enchilada sauce since its only 2 carbs for 1/4 cup. The sauce goes a long way
