    Bibimbap (serves 2):

    -3tbsp Avocado oil

    -Green onion

    -4 cups cauliflower rice

    -Red cabbage (raw)

    -Shiitake mushrooms (stir fried in oil, salt and pepper)

    -Red onion and delicata squash (air fried in oil, salt and pepper).

    -Leftover veggies from random previous meals (Optional).

    -Egg (optional)

    Sauce (makes 2 servings):

    -2tbsp gochujang

    -1tbsp sesame oil

    -1tbsp rice vinegar

    -1tbsp lakanto monkfruit sweetener (or other sugar substitute)

    First, heat up 3 tbsp avocado oil. Place green onion whites and stir fry till fragrant. Place cauliflower rice in pan and stir fry for 10 minutes until the rice is tender. Salt to taste and and garnish with plenty of green onion tops.

    If you have a stone pot, you can brush the bottom with an additional 1tsp sesame oil before putting a heap of cauliflower rice in there – That will help the bottom crisp up slightly. Place your assortment of veggies on top, and turn the heat on until you hear a crackling sound. Pour sauce over and mix.

    I used the veggies I had on hand. This is perfect for using up old, random vegetables. For an authentic recipe you might find in restaurants, use: spinach, carrots, shiitake, zucchini.
