  1. Breakfast spaghetti & sausage/protein pancake meatballs with butter, bacon and cheese

    I’m low cal and not strictly keto so feel free to use higher fat options as noted to fit your needs.

    **Breakfast Spaghetti & Meatballs**

    **Meatballs**

    – 1lb raw sweet italian chicken or turkey sausage (the kind in a tube, not links) (pork would be fine too)
    – 2 diced Kodiak cake protein flapjacks (I used frozen ones)
    – 3T sugar free maple syrup
    – 25g egg beaters or liquid egg whites

    Mix ingredients and form into small meatballs, mine made 22 balls at 29 calories per meatball. Roast for about 18 min on 375.

    **Egg “Noodles”**

    – 1 egg
    – 322g egg beaters or liquid egg whites (equivalent of 7 eggs)
    – 0.5t xanthan gum
    – 15g whole wheat flour (or almond flour)
    – 3 oz light cream cheese
    – 0.5t salt

    Blend in blender, spread with a spatula over 2 parchment-lined baking sheets (spray parchment with spray oil), bake at 350F for 5 minutes. Gently peel from parchment and roll up. Slice the roll into thin slices. Divide between 5 containers. Top with 4 meatballs each and garnishes (per box: 2g butter, 1g grated parmesan, 1 piece center-cut bacon, parsley)

    Per box: 226 calories, 8.5g net carbs/ 8.5g fat/ 25.5g protein

  2. I’ve tried to make these egg noodles and they always turn out to be a mess. Either undercooked so everything sticks to the paper or overcooked and it tastes terrible. I can’t figure out the right balance to make sure the egg sets evenly.

  3. I’ve had good luck with red lentil pasta from Walmart, of all places. The pasta from Great Low Carb Bread co works out for me, in small portions. If I’m in a hurry, I just heat up some precooked hamburger meat, pour a bit of spag sauce over it, just enough to notice, and then smother it in shredded parmesan. Tasty and fast. I tried a version of these once, I think you had to boil them for a minute or two to firm them up. A bit more work than my lazy bones wanted, but they were really good with butter, a sprinkle of garlic salt and grated parmesan.

  4. Are butter and cheese considered good fat during Keto? I heard dairy products should be avoided in Keto
