  1. THIS IS SO EASY!

    Ingredients:
    – 1 pound ground Turkey
    – 1 cup chunky salsa
    – 4 eggs
    – Salt
    – Pepper
    – Cayenne (optional)

    Directions:
    1. Put ground Turkey in skillet and season with salt, pepper, and cayenne
    2. Brown until most of the liquid is gone
    3. Add the salsa and once it is warm, turn the skillet to low
    4. Make 4 “holes” in the meat mix and crack an egg into each. Season each egg with salt and pepper
    5. Cover the skillet with a lid and cook until the egg whites are fully cooked (I like to have my egg a little runny, so cook a few minutes longer to have it fully cooked through)
    6. Serve warm

    – Makes 4 servings; numbers below are per serving
    – Calories: 250
    – Fat: 12
    – Carbs: 4
    – Fiber: 2

  2. Yanno, in a smaller skillet, I bet I could make an individual portion of this.

  3. Growing up we used to make something a lot like this! Never thought to make it as a low carb option.
